With only three ingredients (tapenade + goat cheese + tiny tomatoes) they are the perfect answer to last-minute guests. They also make an elegant addition to a cheese tray.

Tapenade and Goat Cheese Stuffed Tomato Appetizers

Makes 16 stuffed tomato bites.

8 grape tomatoes
1/4 cup tapenade
1/4 cup goat cheese
1/2 tsp ground cumin (garnish)

Cut each grape tomato in half lengthwise with a serrated knife. Carefully scoop out the tomato seeds from each tomato half.

In a small bowl, whip tapenade and goat cheese together with a fork until thoroughly blended.

Create a piping bag by filling resealable plastic sandwich bag with the tapenade and goat cheese mixture, carefully pushing all the mixture into one corner. Once you have the mixture in the corner, snip a very small triangle to create a hole.

Using your piping bag, fill each tomato half with the a generous squeeze of the tapenade mixture.

Garnish with a small slice of sun dried tomato or a sprig of parsley. Sprinkle a light dusting of cumin on top.

    I’ve done tapenade on top of goat cheese before to just spread on some crackers, but I’m definitely going to try it this way next time, looks yummy!
