Sweet and Spicy BBQ Sauce with Chipoltle and Honey

This is no ordinary barbecue sauce recipe. It has superpowers. It transforms the most ordinary of meals into something much, much more exciting. Try making BBQ chicken or BBQ ribs with it for a new twist on old favorites.

There is no sugary ketchup on the ingredient list. Instead, we start with a can of crushed tomatoes and we break that down using honey and apple cider vinegar to produce a rich, complex tomato sauce as a base.

Did I mention how easy this sauce is to make? It takes less than 10 minutes of prep time.

Here’s how it goes: Brown some garlic and onion in oil and then add in a can of crushed tomatoes, honey, vinegar, and a bunch of spices.

Put the lid on and walk away for an hour. Come back, take the lid off, and walk away for another hour. Blend. And…you’re done!

Five ways to use this BBQ sauce:

1. On burgers.

2. Toss chicken wings in this sauce and broil them. Or make sea salt and pepper chicken wings and dip them in this sauce.

3. As a dipping sauce with veggie sticks like carrots and celery.

4. With meatballs.

5. As a pizza sauce.

2 tbsp olive oil
1 cup of minced onion (about 1 medium onion)
2 tbsp minced garlic (about 3 large cloves)
1-28 oz can crushed tomatoes
2/3 cup honey
1/4 cup apple cider vinegar
1 tsp salt
1/2 tsp chili powder
1/2 tsp chipotle powder
1/4 tsp ground black pepper
1/8 tsp ground coriander seed
1/8 tsp ground cumin seed

In a large pot, over medium heat, heat olive oil. Add onion and garlic, stirring frequently and cooking until golden and fragrant, about 7 to 8 minutes.

Add all remaining ingredients. Bring to boil. Reduce and simmer on low heat, covered, for 1 hour.

Stir. Continue simmering, uncovered, for 1 hour, stirring occasionally.

Blend with an immersion blender until smooth and thick. Alternatively, use a blender. Transfer to large jar.

Keeps for several months.

NOTES: If you don’t have a can of crushed tomatoes, you can use a can of diced tomatoes and blend it for 10 seconds or so until it is smooth.
